Cold soup for a hot summer’s day…

For those of you who know me I’m a huge fan of cold soup – Lithuanian barsciai (cold beet soup) and Gaspatcho (cold tomoto soup) are two of my favorites…

For Father’s Day, we had a little BBQ with the fam at our place.  A simple salad, rotisserie chicken AND cold cucumber and avocado soup!  It was the first time I made this recipe and it was so easy.  I think in total it took me about fifteen minutes from start to finish.  Recipe and photos below!


– 2 Avocados
– 1 Cucumber
– 1 cup Plain Yogurt
– 1 1/2  cups Chicken Broth
– 1 lime
– 1 cup cooked mini shrimp
– Pinch of salt
– Mint, cilantro, green onions

Blend one avocado, the cucumber (cut in small pieces first), yogurt, zest of lime/lime juice and chicken broth until liquified.  Add a pinch of salt and stir.  Chill for 2 hours minimum.  Pour into bowls, add herbs, shrimp and the remainder of the avocado (in small slices looks nice) on top.  Bon appetite!
